Our first Oktoberfest as a brewery is just over two weeks away; first of many that is. That’s a pretty big deal to us and to celebrate, we are bringing an awesome beer lineup for your drinking pleasure.
Instead of having you wait in full anticipation, we thought we’d share most of our Oktoberfest offerings with you. Yes, I said most. We have a few surprises up our sleeve. Are you ready?
Hop, Drop ‘n Roll IPA
For us this is where it all started! The rich golden color comes from a blend of English and American base malts accented with substantial amounts of Victory and Wheat malt. The American citrus hops take center stage with emphasis on late boil additions of Citra and Amarillo. This signature ale is hopped before, during, and after the boil!

Coco Loco Porter
Chocolate and Brown malts contribute to a stunningly deep rich color with ruby highlights in this Robust Porter. The slight bitterness from American chocolate is balanced with the sweet roastiness of toasted organic coconut. A great beer before, during, or after a meal!
ABV 5.9% SRM 32 IBU 42
Ramble on Red
For our “NoDa-rian” red ale, we created a balanced and interesting red ale that uses the unique combination of Rye malt and Belgian Special B paired with Northern Brewer and Challenger hops. The Rye gives this beer a unique bready dryness and helps compliment its amber color while the Belgian Special B malt adds a slight raison flavor & deeper ruby color. The hops add a nice earthy and slightly spicy balance to the malts and help compliment the bready character as well. Enjoy this beer as the start of the wild and crazy road through the world of NoDa craft brews.
ABV = 5.0% SRM = 14.5 IBU = 30
Monk’s Trunks – Belgian Pale Ale
This clean, refreshing beer is a perfect introduction to the complexity that the Belgian styles can present. We utilize traditional Belgian malts and European hops that differ significantly from the American pale ale varieties. The Belgian yeast strain brings flavors of apple, banana, vanilla and grapes naturally through its fermentation and accent this balanced brew with seeds of paradise, a bright and somewhat citrusy pepper seed similar to coriander. This blend of traditional malts, hops, Belgian yeast and unique spice gives us a balanced and intriguing palate pleaser.
ABV = 5.2% SRM = 7.4 IBU = 27
NoDaRyeZ’d – Double Rye Indian Pale Ale
The beer is based with a solid malt backbone of Two Row, CaraPils, Crystal Malt, and Victory malt. We then add a hefty amount of Rye to further the grain bill and give the beer a more bready and dry character that cleans the beer’s finish. The addition of rye also enhances the already deep amber hue of the beer. The hop profile is better considered an assault. With 7 different hop infusions this beer has hop character for days. It has a unique blend of Chinook, Centennial, Palisade, Cascade, Warrior and Galaxy hops that are added to not only give a huge “American” IPA flavor and aroma but also to accentuate the spiciness of the Rye added in the malt bill.
ABV = 8.85% SRM = 12 IBUs = 90
